♨️ How to Cook a Specklebeef Brisket
Because Speckle Park beef has exceptional natural marbling, it’s perfectly suited for barbecue smoking:
  1. The Rub: Keep it simple - any SPG - coarse salt, freshly ground black pepper, and garlic powder.
  2. Low & Slow: Set your smoker to 107°C to 121°C (225°F to 250°F). Expect about 1 hour of cooking time per 500g
  3. The Stall (Around 65-70°C): Once the internal temperature hits 65-70°C, the meat might stall. Wrap the brisket tightly in butcher paper or foil to push past the stall. 
  4. The Probe Test: The brisket is done when it hits roughly 93°C to 96°C (201°F to 205°F) and a meat probe slides in as smoothly as warm butter.
  5. The Rest: Let it rest in a chilli bin (still in its paper/foil, wrapped in a towel) for 1 to 2 hours before slicing - this allows the meat to relax, resulting in a very tender texture.
